The Perfect Turkey Recipe
Compliments of Executive Chef Chris Smythe from Noble Restaurant at Prince of Wales
Serves 6 people
Ingredients:
15 lb fresh local Turkey
½ cup Kosher salt
12 Bay leaves
8 oz Salted butter
1 Bunch of thyme
Method:
- Place the turkey in a large container so that you can submerge it in cold water and add the ½ cup of salt and 12 bay leaves.
- In a refrigerator, let the turkey sit in the brine for 8 hours or overnight. Take it out of the brine and place it in a roasting pan and place back in the fridge to dry for 2 hours.
- Pull the Turkey out of the fridge and with your fingers start to loosen the skin around the bird without tearing it. Soften the butter and add the thyme leaves then start to place pockets of butter under the skin all over the bird until the butter is gone.
- Place the Turkey in the oven (uncovered) at 375˚ F for about 2.5 to 3 hours or until the internal temperature reads 180˚ F then let it rest before you cut into it for at least 1 hour or you will not retain all those great juices.
