Sweet and sustainable honey

At Millcroft Inn & Spa, using locally sourced ingredients in our kitchen whenever possible is a key priority. We work with local farmers and source food that is grown around the Caledon area. Our wine cellar is full of delicious Ontario wine and we tap and bottle our own maple syrup onsite. We also have a large kitchen garden that supplies fresh produce for Chef James Buder’s creative menus.

This year we have taken our love for local one step further by adding 24 honey bee hives to our grounds in partnership with Toronto Bee Rescue< and Ontario Honey Creations. Bees are critical to the health and vibrancy of Central Ontario agriculture and this partnership encourages a healthy ecosystem while providing our guests and Headwater’s Restaurant with fresh and fragrant local honey.

The colour and flavour of the honey varies depending on the season it is produced due to the different nectar available to the bees. The honey is kept raw and unpasteurized ensuring its natural health benefits remain intact.

Lighter in flavour and colour, Spring Blossom honey comes from early season flowers like crocuses, dandelions and tree blossoms like maple, apple, pear and cherry.

Closest in taste to traditional Ontario honey, the source for Summer Blossom is mainly clover and offers a unique flavour from the mix of flowers on the Millcroft grounds.

The Millcroft Beekeeper

The Millcroft Inn beekeeper is Peter Chorabik, a third-generation beekeeper. Peter and his wife Sarah started beekeeping in 2012 through their organization Toronto Bee Rescue. Their knowledge and passion for honey bees has led them to move from Toronto to the family farm to focus solely on beekeeping in Caledon.
