Congratulations to Gene Olivastri who created this delightfully tasty and refreshing cocktail that we’re naming “Lychee by the Pool.” You can taste Gene’s Spring-perfect cocktail at our Sip and Savour in the Spring Garden event this April or by following the recipe below you can try it at home!
We’re also sharing the recipe for a Niagara-centric cocktail called “Strawberry Fields Forever” developed by Queen’s Landing’s own, Matthew Simon. This fruit forward cocktail will also be available to sip and savour at our Spring event. Learn more about Sip and Savour in the Spring Garden here.
Lychee by the Pool
Cocktail by: Gene Olivastri

Ingredients:
1 oz Beefeater Gin
1/4 oz Lime cordial
1/2 oz Soho Lychee
4 oz Cranberry Juice
Method:
Place each of the ingredients into a shaker filled with ice and select your favourite cocktail glass. Shake and pour the contents into glass including the ice! Cheers.

.Strawberry Fields Forever
Cocktail by: Matthew Simon

Ingredients:
1 oz Beefeater Gin
0.5 oz Lemon Juice
1 oz Strawberry Puree
0.5 oz Cucumber / mint syrup
Splash of Niagara Sparkling Wine
Method:
Place each of the ingredients into a shaker filled with ice and select your favourite cocktail glass. Shake and strain the contents into your favourite glass. Top with Niagara sparkling wine.
