Say hello to summer a simple yet out of this world dessert recipe. This easy strawberry mousse is a delicious balance of wonderful strawberry flavor and smooth creaminess. Strawberry Mousse
Compliments of Pastry Chef Karen Souillet from Headwaters Restaurant at Millcroft Inn & Spa.
Serves 6 People (depending on glass size)
Ingredients:
8 Egg yolks (large)
250 g Sugar
125 ml Milk
100 ml Strawberry purée
30 ml Brandy
1 tsp Lemon juice
25 g Gelatin
750 ml 35% Cream whipped
Drop of red color if desired
Method:
- Whip egg yolks, milk and sugar into a stainless-steel bowl. Whisk while warming this mixture over a bain marie until it is light and fluffy (egg yolks will go pale yellow).
- Add fruit purée. Make sure that the heat does not exceed 75˚C. Add brandy – DO NOT BOIL.
- Presoak gelatin in 50ml of water then add to all other ingredients. Red food coloring and lemon juice may be added.
- Fold in 35% whipped cream. Pour into glasses.
Tips:
You can pre-line a glass with thinly sliced strawberries for extra décor to make it look special.
