Discover fine dining at Headwaters Restaurant at Millcroft Inn & Spa, where French-inspired technique meets the best of Ontario’s seasonal ingredients. Set within the historic Old Mill building, the restaurant pairs rustic charm with refined interiors, creating a warm and distinctive atmosphere. Each dish is thoughtfully composed to highlight freshness, innovation and balance, while views of the Mill Pond and Shaw’s Creek Falls make every meal a celebration of both culinary craft and the natural beauty that surrounds it.

Available daily Monday to Friday from 7:30 a.m. to 10:00 a.m., Saturday and Sunday from 8:00 a.m. to 10:30 a.m. To make a reservation, please call extension 525216. The breakfasts below are served with a choice of coffee or tea. Breakfast prices subject to HST. Gratuity not included for breakfast.

Chef Nicolas Petitjean’s culinary journey began with his education at Cfa Polyvalent De Marzy. Like any dedicated chef, he learned tremendously from his mentors, his first being Jean Crotet, and his most challenging being Gilles Arzur, Executive Chef at Four Seasons Mauritius. His favourite dishes to create reflect his background and pride for his hometown of Burgundy.
