Inn On The Twenty's Apple Almond Galette Recipe

Apple season is here and one of our favourite ways to enjoy this crunchy and juicy fruit is baked and in a galette. A galette is a free-form pie rolled into a circle and topped with fruit, in this case baked apples! The taste is just like a pie, with a little more crunch from the exposed pastry. This apple galette recipe with almond filling uses tart apples and a sweet almond cream. Apple Almond Galette

Yields 8 – 12 Galettes

Ingredients:

1 box Frozen puff pastry sheet 
3 – 4 Baking apples

Ingredients for Almond Cream:
½ cup Unsalted butter
½ cup Sugar
1 Egg
1 tbsp Flour
1 cup Ground almonds
1 tsp Almond extract

Method:

  1. Preheat oven to 400˚F.
  2. Thaw puff sheets. Roll and cut each puff sheets into 4 – 6 circles using a cookie cutter.
  3. Place each circle on a baking sheet.
  4. To make the almond cream, cream butter and sugar until light and fluffy.
  5. Add egg and whip, add almond extract.
  6. Add flour and ground almonds and mix until combined.
  7. Spoon a couple tablespoons of almond cream in the center of the puff circles.
  8. Peel and cut apples into halves. Cut each half into ¼ inch slices.
  9. Layer slices of apples on almond cream and sprinkle with cinnamon if desired.
  10. Bake in the oven for 30 – 40 minutes until the puff rises and turns golden brown.
  11. Let cool and glaze with apricot jelly and icing sugar if desired.

Tip: 

Substitute apples for pears or peaches if desired.
