Vintage Hotels’ Icewine Cocktail Recipes

Celebrate winter in Niagara Region with the world-famous Icewine harvest! Indulge in this decadent wine at our region’s wineries and enjoy festive experiences like the picturesque Icewine Village in Niagara-on-the-Lake.

To celebrate Icewine and the grape harvest we’ve asked the teams at Cannery Restaurant at Pillar and Post, Noble Restaurant at Prince of Wales and Tiara Restaurant at Queen’s Landing to create cocktail recipes that you can make and enjoy at home. All recipes compliments of our Food & Beverage teams. 

Do or Doughnut 

Inspired by the sweet spirit of Niagara-on-the-Lake’s Icewine Festival, the Do or Doughnut cocktail blends liquid gold with creamy indulgence for a dessert-inspired sip that’s perfect for cozy winter evenings.

Ingredients: 

1 ½ oz Glazed Doughnut Absolute Vodka
0.75 oz Appleton Estate Aged Rum
0.25 oz The Hare Frontier Vidal Icewine
0.75 oz Cream

Method:

  1. Fill a cocktail shaker with ice.
  2. Add vodka, rum, Icewine, and cream to the shaker.
  3. Shake vigorously for 30 – 40 seconds until well chilled and slightly frothy.
  4. Fine strain into a chilled coupe glass.
  5. Garnish: Add an orange wheel to the rim or float it on top.

The 99 Maple

Celebrate Niagara-on-the-Lake’s Icewine Festival with The 99 Maple—a rich blend of rye, maple, and a luxurious splash of Icewine that captures the essence of winter indulgence.

Compliments of Food & Beverage Manager Jonathan Ingrao from Tiara Restaurant at Queen’s Landing

Ingredients:

1 ½ oz Gretzky 99 Small Cask Rye
½ oz Aperol
1 oz Maple syrup
1 oz Lemon juice
½ oz Icewine (Riesling)
Egg white

Method:

  1. Combine all ingredients into a shaker.
  2. Shake vigorously without ice for about 10 – 15 seconds to emulsify the egg white and create a silky texture.
  3. Add ice to the shaker and shake again for 10 – 15 seconds to chill and dilute the drink properly.
  4. Strain the mixture over fresh ice in a rocks glass.
  5. Express an orange peel over the drink for aroma, then add it as garnish.
  6. Finish with a float of Icewine on top for a luxurious touch.

Raise a glass to the Icewine Festival in Niagara-on-the-Lake with The GATSBY Signature Cocktail, where Vidal Icewine meets premium vodka and effervescent sparkling for a truly decadent experience.

Ingredients:

1 oz The Hare Wine Co. Vidal Icewine 
1 oz Crystal Head vodka
3 oz Château des Charmes ‘Eclat’ Sparkling
Frozen Grape to garnish

Method:

  1. Chill all ingredients beforehand to ensure the cocktail is served perfectly cold.
  2. In a mixing glass or shaker, combine the Icewine and the vodka.
  3. Stir gently (do not shake) to preserve clarity and texture.
  4. Pour the mixture into a chilled coupe or flute glass.
  5. Top with the sparkling wine.
  6. Garnish with a single frozen grape dropped into the glass for an elegant touch.
  7. Serve neat—no ice, just the frozen grape acting as a subtle chiller.
