Vintage Hotel’s Summer Berry Clafoutis

Celebrate the flavors of summer with this delightful Berry Clafoutis recipe, crafted by the talented Pastry Chef, Kim Cunningham at Noble Restaurant. This classic French dessert combines a lovely blend of fresh summer berries enveloped in a smooth batter that’s baked to perfection. Experience the taste of summer in each bite, a perfect treat for warm, sunny days.

Summer Berry Clafoutis

Yields 8 servings

Ingredients: 

2 ½ cup Mixed fresh berries of your choice
10 tbsp Sugar
3 large Eggs
2 tsp Vanilla extract
1 tsp Lemon zest
½ cup All-purpose flour, sifted
1 cup Milk
1/8 tsp Salt
Icing sugar (to dust on top)

Method:

  1. Preheat the oven to 350°F.
  2. Spray an 8″ x 8″ baking dish with cooking spray, and dust lightly with flour.
  3. Place berries in a dish.
  4. In a separate bowl, whisk the eggs, sugar, salt, and flour until combined.
  5. Add milk, vanilla, and lemon zest into the bowl and whisk until smooth. Pour over the berries.
  6. Bake for 45 – 50 minutes, or until light brown, and a toothpick inserted into the center comes out clean.
  7. It will still jiggle a bit when taken out of the oven – that is ok! Let it cool on the counter. It will deflate while cooling.
  8. When cool, dust with icing sugar and serve.

Tips:

  1. Can be stored in the fridge and warmed again for serving.
  2. Alternate fruits can be used as well such as peaches, apples, plums, cherries, etc.
