Sweet Potato Soufflé
2 lbs Sweet potato puréed
1/2 tsp ground Cloves
1/2 tsp ground Cinnamon
1/2 tsp ground Nutmeg
1 tbsp Cream of Tartar
10 Egg whites whipped to full peak
Salt & pepper
8 Buttered ramekins
- Blend all the spices and seasoning into the sweet potato mix.
- Then add the cream of tartar, and fold the egg whites into the sweet potato mixture.
- Fill each ramekin and bake at 350 degrees for about 15 to 20 minutes.
