Move over, pumpkin pie—Pastry Chef Karen Souillet from Headwaters Restaurant has created a Pumpkin Cake with Cheesecake that will steal the spotlight this fall.
Why settle for just one dessert when you can have the best of both worlds? This decadent treat layers warm autumn spices with rich, creamy cheesecake, combining two classic cakes into one irresistible bite. Perfect for your Thanksgiving table or any fall gathering.
Pumpkin Cake with Cheesecake
Serves 10 – 12 people
Ingredients for Pumpkin Cake:
3/4 cup All vegetable oil
1 cup Light brown sugar
2 large Eggs
1 tsp Vanilla
1 1/3 cup Pumpkin purée tin
1 cup All purpose flour
1 tsp Baking soda
1 tsp Ground cinnamon
1 tsp Pumpkin pie spice
¼ tsp Salt
1 cup pecans
Ingredients for Cheesecake Filling:
16 oz Cream cheese, room temperature
3/4 cup Granulated sugar
¼ cup Greek yogurt or sour cream
1 tsp Vanilla
1 tbsp All purpose flour
3 large Eggs
Method for Prep:
- Preheat the oven to 350°F.
- Spray 9” springform pan with cooking spray.
Method for Cheesecake Filling:
- Beat the cream cheese with granulated sugar until smooth, approximately for approximately two minutes.
- Add the sour cream, vanilla, flour and mix for 30 seconds.
- On low speed, add eggs one at a time and beat just until blended. DO NOT OVERMIX – set aside.
Method for Pumpkin Cake:
- In large bowl, whisk flour, baking soda, cinnamon, pumpkin pie spice, and salt together.
- In medium bowl, whisk together oil, brown sugar, eggs, vanilla and pumpkin purée.
- Pour wet ingredients into dry ingredients and whisk until no lumps remain. DO NOT OVERMIX.
Method for Preparation:
- Spread 1 ½ cups of cake batter into the bottom of the prepared pan.
- Drop in spoonful’s of cheesecake batter and the remainder of cake batter in between.
- Top with pecans.
- Have a deep roasting pan filled with one inch of boiling water.
- Wrap the bottom of springform pan in thick layer of foil and place in pan.
- Bake for Approximately 60 minutes – may need longer -depends on oven.
- Check with a toothpick until it comes out clean.
- Turn off the oven and open door 1/3 of the way.
- Leave the cake in the oven for one hour.
Tips:
There are many ways to garnish this for serving:
- Make a cream cheese frosting for a sweet take.
- Drizzle with Dulce de Leche or caramel sauce or chocolate sauce.
- Serve with whip cream or Ice cream.
- Dust with cinnamon and icing sugar.
