Inn On The Twenty’s Vegan Strawberry Donuts

Pastry Chef Jayne Inouye’s vegan strawberry donuts are a must-try for summer! These donuts are crafted with fresh, juicy strawberries and a mix of plant-based ingredients that ensure a light and fluffy texture. Enjoy the sweet taste of strawberries in every bite, knowing that these donuts are both delicious and vegan-friendly.

Fluffy Vegan Strawberry Donuts

Yields 6 donuts

Ingredients for Donut Dough:

125 g Almond milk
5 g Dry active yeast
212 g All-purpose flour
1 g Salt
20 g Vegan butter or room temperature coconut oil
15 g White sugar
20 g Powdered sugar

Ingredients for Strawberry Filling: 

400 g Strawberries
40 g White sugar

Method for Donut Dough:

  1. Warm the almond milk to warm bath water temperature and add the yeast.
  2. Let bloom for 10 minutes then add the other ingredients on top.
  3. Start by mixing with a fork until a ball forms. 
  4. Then transfer to the table top and knead with your palms for 2 minutes or until you get one smooth looking ball.
  5. Put in a sprayed bowl and cling wrap it tightly.
  6. Let rest in the fridge overnight or let proof until doubled in size for same day baking. 
  7. Once doubled or rested overnight, roll until 1½ cm thick on a floured surface.
  8. Cut into 3 inch circles and place on a tray with cling film again proofing until doubled in size.
  9. Fry at 350°F until golden brown on both sides, roughly 1 – 2 minutes per side.
  10. Let extra oil drip off before dusting with your powdered sugar.
  11. Now fill the donuts with the strawberry filling using a piping bag and small circle tip.

Method for Strawberry Filling:

  1. Cut your strawberries into small cubes and add to a pot with the sugar. 
  2. Cook on low until your mixture reduces and looks similar to the strawberry jam you would get from a store, this may take 20 – 40 minutes depending on your stove heat, make sure to stir regularly to make sure it doesn’t burn!
  3. Let cool before bagging & filling your donuts.

Tips:

  1. Feel free to substitute for store bought strawberry jam if that’s what you have on hand or use alternate fillings (caramel, other berry jams, curds, pastry cream, etc).
  2. If you don’t have a piping bag feel free to use a Ziplock baggie or just dip your donuts if needed.
