Inn On The Twenty’s Chocolate Strawberry Chip Cookies

Combining rich chocolate chips with juicy dried strawberries, creating a flavor explosion in every bite. These cookies are soft, chewy, and packed with deliciousness, making them the ideal gift for your loved one.

Chocolate Strawberry Chip Cookies

Yields 25 Cookies

Ingredients

227 g Unsalted butter, room temperature
200 g Brown sugar
100 g White sugar
100 g Whole eggs
5 g Vanilla paste or extract
350 g All purpose flour
5 g Baking soda
2 g Salt
150 g Dehydrated or freeze-dried strawberries (put 25 nice pieces for the tops of each)
200 g Dark chocolate chips

Method:

  1. Cream the butter and sugars together until it looks like the colour of a Tim Horton’s double double coffee.
  2. Add your eggs and vanilla in and mix again until a homogeneous mixture appears, make sure to scrape the sides down.
  3. Add your dry ingredients and mix again about 90% of the way, now add your chocolate chips and strawberries, mix again until one uniform dough is made.
  4. Scoop your cookies using a 2 tablespoon size scoop, and place a slice of dehydrated strawberry on top of each one.
  5. Place in the freezer overnight before baking.
  6. Bake at 350°F for 15 minutes or until the edges are golden in color. 

Tips:

  1. Do not substitute for fresh strawberries, it will add too much moisture and the cookies will not turn out.
  2. If you don’t have any freeze-dried or dehydrated strawberries, you’re welcome to dehydrate your own strawberries (or other fruit) by slicing your berries into 1 cm thick slices and drying at 145°F for 12 hours.
