Millcroft Inn & Spa’s White Chocolate Mousse

Indulge in romance this Valentine’s Day with a luxurious White Chocolate Mousse layered with macerated strawberries, crafted by Pastry Chef Karen Souillet. Each spoonful is a harmony of creamy white chocolate and vibrant berry sweetness. Pair it with candlelight and a glass of sparkling wine for the ultimate celebration.

White Chocolate Mousse with Macerated Strawberries

Serves 4 people 

Ingredients for White Chocolate Mousse:

250 g Good quality white chocolate (Lindt)
“4 “ Gelatine sheets (BLOOMED) or 4 tsp gelatin powder (12g) – make sure to soak in cold water per directions on box
2 Large eggs
1 tsp Cointreau (optional) or substitute with a ½ tsp orange extract (i.e. Watkins)
300 g 35% Cream – whipped to creamy but firm hold

Ingredients for Macerated Strawberries 

1 cup Strawberries, cut into large cubes
4 tbsp Sugar

Method for Macerated Strawberries: 

  1. Cut the strawberries into large cubes and place into a bowl.
  2. Add sugar let sit for a minimum of 30 minutes or overnight if possible.

Method for White Chocolate Mousse:

  1. Bloom the gelatin (soften it in cold water so it’s ready to use). Set aside. 
  2. Whip the cream until it forms soft peaks and keep chilled. Set aside.
  3. Melt the white chocolate gently using a bain-marie (double boiler). Avoid boiling the water – slow and steady prevents the chocolate from burning or caramelizing.
  4. Warm the eggs in a bain-marie, then whisk in the bloomed gelatin until fully dissolved.
  5. Combine the egg mixture with the melted chocolate and stir until smooth.
  6. Add Cointreau for a subtle citrus note and mix well.
  7. Fold in the whipped cream carefully to maintain a light, airy texture

Assembling the White Chocolate Mousse:

  1. Spoon macerated strawberries into the bottom of your serving dish or glass.
  2. Gently layer the white chocolate mousse on top.
  3. Alternate layers of strawberries and mousse.
  4. Garnish with fresh berries, chocolate shavings, or a sprig of mint.

Tips:

  1. Sprinkle in crumbled cookies of your choice for a delightful crunch. 
  2. Garnish with green mint leaves, delicate pea shoots, or edible flower petals.
  3. For a dramatic presentation, top with strawberry Pirouline wafer cookies—easily found at most grocery stores.
