Ginger Carrot Cake
Serves 12 – 15 people
Ingredients for Ginger Carrot Cake:
1 cup Brown sugar
½ cup Sugar
2 tsp Cinnamon
1 tsp Salt
½ tsp Baking soda
2 tsp Baking powder
1/3 cup Candied ginger, puréed
16 oz Carrots (weigh before grating)
1 ½ cup All purpose flour
4 Eggs
2 tsp Vanilla extract
1 ¼ cup Vegetable oil
Optional:
1 cup Walnuts or pecans, chopped
½ cup Golden raisins or currants
Method for Ginger Carrot Cake:
- Combine the first 9 ingredients and mix until smooth.
- In a separate bowl, combine eggs, vanilla, and vegetable oil together.
- Slowly add the egg mixture to the carrot mixture. Mix until smooth.
- Fold in nuts and fruits if desired.
- Place in Greased 8” cake pan.
- Bake at 350°F, for approximately 25 – 30 minutes, or until a toothpick comes out clean.
- Let the cake cool completely before frosting.
- The cake can be frosted with icing or eaten on its own.
Ingredients for Cream Cheese Frosting:
8oz Cream cheese
½ cup Butter, soft
4 cup Icing sugar
2 tsp Vanilla extract
1 tsp Lemon juice
Method for Cream Cheese Frosting:
- Cream the cheese, butter, vanilla and lemon juice for a few minutes.
- Add icing sugar and continue mixing until smooth and fluffy.
- Frost once cake is completely cool.
Tips:
- Candied ginger may be omitted if you do not like it.
- Be sure to get ginger that is in a syrup – usually comes in a jar. If you are unable to find the jar, Bulk Barn carries crystallized ginger, but it tends to be dry.
- You can let it soak in sugar water to rehydrate it a bit.
