Prince of Wales has been awarded the 2007 VQA Restaurant Award of Excellence from the Wine Council of Ontario. This awards rewards licensees who are embracing Ontario VQA wines and offering their patrons substantial VQA wine lists, tasting menus, VQA wines by the glass, and winemakers dinners. Our sommeliers are happy to help you select the perfect wine to pair with your meal, or a special bottle to enjoy in the privacy of your room.
Vintage Hotels also offers unique wine-tasting experiences and packages. Enjoy an inside look at winemaking with an exclusive behind-the-scenes tour of Niagara wineries, and sample a selection of vintages from their private cellars.
For over twenty years, the Prince of Wales wine list has been the personal passion of Chef Sommelier Fred Gamula, who has assembled an outstanding offering of varieties from around the world. With more than 400 selections of both New and Old World vintages, the Prince of Wales wine cellar houses over 4,000 bottles.
Fred offers insight into the artful blending of food and wine, providing guests of Escabèche?Restaurant with an unforgettable experience. "I like having fun with our guests, showing them a discovery I've made, to make wine an enjoyable experience for them. I want people to come back a hundred times."
Fred Gamula graduated from George Brown College as a certified sommelier. While he has sampled many wines in his travels to France, Italy and California, he remains an avid supporter of Ontario wines. Under his direction, Prince of Wales wine list has won numerous awards from Wine Spectator Magazine.
