At Escabèche, the hotel's flagship restaurant, Chef Andrew Dymond creates an original menu from the finest ingredients, both locally grown and imported from around the world. Out of this, he fashions dishes steeped in the traditions of France and England and strikingly original in their execution.

Chef Dymond has developed close relationships with the Niagara Region's best producers. He uses organic greens grown locally at Wyndym Farms, often harvested just hours before being served. Chef's philosophy: "Don't overdo food. Treat it with the utmost respect in the most natural form, and you'll get the best presentation and product."

Our Sommelier Fred Gamula will guide you through our collection of wine, thoughtfully selected from the most prestigious vineyards in the Niagara Region and around the world. Or, if you prefer a less formal dinner, stop by the Churchill Lounge, and enjoy a menu of sandwiches, pastas, or classic English fish and chips.

Churchill Lounge, a more informal atmosphere in a library setting, provides another cozy spot to dine and relax. Enjoy a refreshment and a bite to eat on Churchill Lounge's outdoor patio located on the most picturesque corner in town.

A visit to the Prince of Wales is not complete without afternoon tea in the lovely Victorian Drawing Room. Revel in the authentic English tradition by sampling teas and succulent pastries in the most beautiful tea room you'll ever see.
